I mentioned this trick in my post on Gluten-Free Double Ginger Cookies. To recap, use a glass with a slightly wider mouth diameter than your cookies, and while they’re hot out of the oven, invert the glass over each cookie and swirl in a circular motion directly on the sheet several times to create the perfectly symmetrical cookie. Let them cool slightly on the tray to set the shape.
